Here’s the recipe:
Easy Weeknight Fried Rice with Eggs and Vegetables
Feel free to substitute whatever protein and veggies you have on hand. I love using frozen vegetables and then anything else in my fridge that needs to get used up.
Makes: 4 servings
Time: 25 minutes
Ingredients:
2 teaspoons plus 2 tablespoons avocado oil
4 large eggs, beaten
2-3 cloves garlic, chopped
2 cups mixed vegetables, diced (try onion, pepper, carrots, frozen peas, frozen corn)
2 cups cold cooked white rice
3 tablespoons reduced-sodium soy sauce
Instructions:
Heat 2 teaspoons oil to a skillet or wok over medium-high heat. Add eggs and cook, lightly moving around and flipping until fully cooked, about 2-3 minutes. Transfer to cutting board and cut into pieces.
Add 1 tablespoon oil to pan, along with fresh vegetables, cook for 2-4 minutes until vegetables start to soften. Add garlic and any frozen vegetables and cook 1-2 more minutes. Transfer to bowl.
Add remaining tablespoon of oil to pan, add rice and stir for 1 minute, coating the rice in oil.
Return the vegetables and egg to the pan and add soy sauce. Stir to combine.
Enjoy!
White and brown rice are the most popular types of rice and have similar origins.
Brown rice is simply the entire whole rice grain. It contains the fiber-rich bran, the nutrient-packed germ and the carbohydrate-rich endosperm.
On the other hand, white rice is stripped of its bran and germ, leaving just the endosperm. It’s then processed to improve taste, extend shelf life and enhance cooking properties (1Trusted Source).
White rice is considered empty carbs since it loses its main sources of nutrients.
However, in the US and many other countries, white rice is typically enriched with added nutrients, including iron and B vitamins like folic acid, niacin, thiamine and more.
