In January 2022 I had the privilege of spending 2 weeks in Ananda in the Himalayas. I also had the experience to cook with Head Chef Diwaker. Here is the last of Chef’s three Ayurvedic vegetarian recipes. Have a look on my channel for the other 2 simple Ayurvedic vegetarian recipes. Namaskar.
RECIPE GLUTEN FREE RAVIOLI (10 servings):
For Dough:
1 Cup Rice Flour
2/3 Cup Water
1/2 Tsp Salt
1 Tbsp Olive Oil
Boil water, salt, and olive oil together.
Add rice flour to it and stir.
Cook on slow flame till the whole comes to a dough consistency.
Knead the hot dough lightly on a greased working table.
For Filling:
1 Tbsp Olive Oil
10 Cloves Garlic
2 Pinches of Chili Flakes
2 Cups of Mushrooms, sliced
2 Cups of of Spinach, shredded
1 Tsp Thyme
1/4 Cup Parmesan Cheese, grated
1/4 Nutmeg, grated freshly
Salt to taste
2 Pinches of Black Pepper, crushed
Heat oil in a pan. Keep flame low. Add garlic, thyme and chilli flakes and cook it slowly for a 1 minute.
For Sauce:
1 Tsp Olive Oil
1 Tbsp Onion, chopped
2 Lemons, freshly squeezed
1 Orange, freshly squeezed
10 Basil Leaves, chopped
1/2 Cup Butter, cubed and chilled
1/4 Tsp Truffel Oil
For Garnishes:
Walnuts
Microgreens
