Our family still enjoys the slow days of Summer here in Greece! We often take short trips to nature and I like to spend my time taking care of our home. Today, after we got back from the countryside, I made some coffee and relaxed a bit with a book. Then, we put a shelf for my books next to my bed and I added some simple and cozy decor.
In the afternoon, I cooked a simple and delicious quinoa salad and finally organized a messy drawer that I’ve been meaning to for a while now.

INGREDIENTS:
1 cup of quinoa
cumin
sweet paprika
pinch of salt
1 red onion
1 pepper
10 cherry tomatoes (preferably firm)
olive oil
juice of ½ a lemon
Rinse the quinoa in a colander under running water until it runs clear. Pour 2 cups of water, a little salt, the spices and the quinoa into a saucepan. Let it boil on low heat for about 15 minutes. It is ready when the sprouts “pop”. Drain, transfer to a large bowl and set aside until you prepare the rest and it cools down. Cut the cherry tomatoes into quarters, the remaining vegetables into small squares and put them in the salad. Add the lemon juice, olive oil and a little extra salt. Mix, cover with plastic wrap and leave in the fridge to cool well and for the flavors of the ingredients to blend nicely together (at least half an hour).
*The cherry tomatoes should be firm because they are easier to cut into squares and they don’ t release too much juice.
*If you don’t have cherry tomatoes, you can substitute with tomatoes. I simply prefer them because they have a sweeter taste and suit this salad better.
