This hearty sweet potato hash is delicious as part of a Thanksgiving meal or great on its own. It cooks in just one pan in less than 20 minutes, and is flavorful, hearty, and perfect for fall.
Ingredients (Serves 4):
¼ cup olive oil
1 onion, t-hinly sliced
2 Large sweet potatoes, peeled and diced
2 cups kale, thinly sliced
2 ribs celery, finely diced
2 cloves garlic, crushed
2 Tbsp fresh minced sage
1 tsp sea salt
Zest of 1 lemon
Instructions:
Heat olive oil in a large skillet over medium high heat.
Add onion and sweet potatoes and cook, stirring occasionally, until potatoes are tender.
Add re maining ingredients and cook, 4-5 minutes until garlic is fragrant and kale has wilted.
