Today’s weather was a pleasant rainy break from the hot summer days that we’ve been having in Greece this year. I spent my morning in my kitchen making homemade pita gyros all from scratch! It takes time and effort but it is definitely worth it!

🥣TZATZIKI:
INGREDIENTS:
1 small cucumber
500 grams of greek strained yogurt
2-4 cloves of garlic
2-3 tablespoons of vinegar
a little salt
olive oil
Start by grating the cucumber on a coarse grater. Put it in a colander, sprinkle some salt and set it aside to extract its juices. If you don’t have much time, press it with your hands or a spoon to remove excess liquids. Next, put the yogurt in a large bowl. Pour in the grated cucumber, the garlic (after you melt it), the rest of the ingredients and mix well with a spoon or spatula. Leave in the fridge for at least two hours so that the flavors bond together nicely.
🥣CHICKEN:
INGREDIENTS:
700 grams of chicken thigh fillet
salt
pepper
sweet pepper flakes
sweet paprika
a little curry
olive oil
some wine
1 onion
Cut the chicken with scissors into large bites. This way they will marinate better and cook faster. Put it in a large deep bowl, add the spices, olive oil, wine and onion cut into quarters. Mix with a spoon, cover the dish with a lid or plastic wrap and leave in the fridge for at least half an hour. You can make it right away, but the longer the chicken stays in the marinade, the tastier it becomes. Ideally, make the night before and leave overnight in the fridge. When it’s time to cook it, remove the onion (you only need it for the flavor, not to cook with the mixture) and put the chicken in a large non-stick pan (or cast iron skillet). If it sticks at first, add a little more oil. After a while, the food will release its juices. Cover the pan with a lid, lower the heat to medium and let it cook until cooked inside (around 15 minutes). If it does not have enough liquid, add a little water. When ready, remove the lid, let the remaining liquid evaporate (if any) and the chicken brown nicely. Ready!
